boring chicken


I'm on a quest to have as many possibilities as I can with boneless skinless chicken breast... please junk up my comment box with your suggestions!!! We're limited to chicken and fish most of our meals, and I want more options on preparing chicken.

My 2 quick go to chicken in a pinch dishes.

Both use boneless chicken, fresh or frozen.

I start them both the same way-

Preheat the oven to 375, get an 8x8 glass pan and throw your chicken in. I've been using frozen tenders lately. I then start dumping seasoning on them. I typically use poultry seasoning, garlic salt, basil, oregano, cinnamon and sugar. Yep. You'd be suprised. The sugar (or splenda) adds a hint of sweet and is a perfect combo with the cinnamon. I have no measurments, I just throw stuff on.

Then, to finish it off, I dump a jar of my favorite spaghetti sauce (I've been loving the prego heart smart) I mix it all up and bake it for about 30. I make whole grain pasta and when the pasta is done and chicken is out, I cut the chicken into little pieces and dump it right on.

with dish #2-

I mix the heart smart cream of chicken (or cream of whatever you like) soup with skim milk and dump that on. Same thing, cook it til it looks good maybe 25 minutes and cut it up. When it's done I either make mashed potatoes and dump the stuff right on top or I'll make stuffing like I did yesterday because I ran out of milk for the potatoes.

They're both simple, tasty and fast. There's alwasy extra for lunch leftovers and no one complains. :)

We have had good luck with some of the foil-pack recipes from reynoldskitchens.com. This one was really good:

Dijon Chicken & Green Beans

4 sheets Reynolds Wrap Heavy Duty Foil
4 boneless, skinless chicken breast halves
1/3 cup Dijon mustard
3 tablespoons honey
1/4 teaspoon pepper
2 cups fresh or frozen green beans

PREHEAT oven to 450 degrees

CENTER one chicken breast half on each sheet of foil.

COMBINE mustard, honey, and pepper, and spoon over chicken. Top with green beans.

BRING up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.

BAKE 18 to 22 minutes on a cookie sheet in oven.
